INGREDIENTS
SHORTBREAD BASE
226g / 8oz plain flour ( + a little extra for following out the pastry)
113g / 4oz butter
Cold water
ALMOND TOPPING
170g / 6oz granulated sugar
113g / 4oz butter
1 beaten egg
1 tsp almond essence
170g / 6oz porridge oats
28g / 1oz flaked almonds
Half jar of raspberry jam
METHOD
Place the flour and butter into a bowl and blend/rub together until the mixture resembles breadcrumbs. Avoid over mixing. Slowly add the water a little at a time until the mixture comes together in a ball. Wrap the pastry in cling film and place in the fridge for 30 mins.
Whilst the pastry is resting, grease a 7 X 11 inch baking tray (swiss roll tin) and line the bottom with greaseproof paper. Melt the 4oz of butter for the almond topping in a pan over a low heat, add the sugar, oats, egg and almond essence. Set aside. Roll out the pastry on a floured surface and line the base and sides of the baking tray with the pastry. Spread the raspberry jam over the base of the pastry. Pour the almond topping sauce over the jam and level with a knife. Sprinkle over the flaked almonds.
Bake for 25 – 30 mins, until golden brown on top. Slice into 12 slices when cool.

Ingredients
SHORTBREAD BASE
100g / 4oz butter, softened
175g / 6oz plain flour
50g / 2oz light muscovado sugar
FRUIT FILLING
450g / 1lb (approx. 2 medium) cooking apples, cored peeled and chopped
175g / 6oz ready-to-eat dried apricots, halved
25g / 1oz caster sugar
TREACLE TART TOPPING
Grated rind of 1 orange, plus 1 tbsp of juice
200g / 8oz golden syrup
8 tbsp porridge oats
Method
Preheat the oven to 160°C / Fan oven 140°C / Gas 3 .
Beat the butter and sugar until fluffy. Stir in the flour until smooth. Tip the mixture into a 23cm / 9in square tin and press down on the base. Lightly prick with a fork and bake for 15 minutes. Set aside to cool.
Put the apples in a pan with the sugar. Cover loosely and cook over a low heat, stirring occasionally, for about 10 minutes or until the apples are pulpy. Add the apricots and cook gently, uncovered, stirring for a further 15 minutes. Whizz to a pureé.
Increase the oven heat to 190°C / Fan oven 170°C / Gas 5.
Spread the filling over the base. Combine the topping ingredients until well mixed and spread over the filling. Return to the oven for a further 20 – 30 minutes, until set and pale golden in colour. Cool in the tin before cutting into 12 equal sized bars.
