Ingredients:

6 oz (175g) self-raising flour                                                             4 oz (100g) soft margarine
4 oz (100g) light muscovado sugar                                               5 oz (150g) sultanas
4 oz (100g) ready-to eat dried apricots, chopped                     3 oz (75g) glacé cherries
2 medium eggs

Icing Ingredients:

4 oz (100g) icing sugar, sifted                                                        1 tablespoon apricot jam
2 ready-to-eat dried apricots, chopped                                      1 tablespoon water

Method:

Pre-heat the oven to 160℃/325℉/Gas 3. Lightly grease and base line a 2lb (900g) loaf tin with greased greaseproof paper.

First prepare the cherries. Quarter, wash and thoroughly dry on kitchen paper. Break the eggs into a large bowl and then measure in the remaining cake ingredients including the cherries. Beat well until the mixture is smooth. Turn into prepared tin and level the top. Bake in the pre-heated oven for about 1 hour 10 minutes or until the cake is golden brown, firm to the touch and shrinking away from the side of the tin. A fine skewer inserted into the centre of the cake should come out clean. Allow the cake to cool in the tin for about 10 minutes and then turn out, remove the paper and leave to cool completely on a wire rack.

For the icing, measure the sifted icing sugar into a bowl. Heat the apricot jam and water together until the jam melts then pour onto the icing sugar. Mix to a smooth spreading consistency, then spoon over the top of the cake. Decorate the cake by sprinkling the chopped apricots down the centre of the cake.

Ingredients:

8oz (225g) self-raising flour                                                                    5 fl. oz (150ml) sunflower oil
4oz (100g) carrots, grated                                                                       2oz (50g) walnuts, chopped
5oz (150g) light Muscovado sugar                                                       2 eggs
2 ripe bananas, mashed                                                                         2 teaspoons of baking powder

Carrot Cake Topping:

6oz (175g) full-fat soft cheese                                                                2oz (50g) soft margarine
4oz (100g) icing sugar, sifted                                                                 A few drops of vanilla essence
Walnut halves to decorate

Method:

Preheat the oven to 180C/350F/Gas 4

Grease the base and line an 8 inch (20cm) deep round cake tin with greased greaseproof paper. Measure all the ingredients for the cake into a large bowl and mix until thoroughly blended and smooth. Turn into the prepared tin and level the surface. Bake in the pre-heated oven for about 50-60 minutes until the cake is well risen and shrinking away from the sides of the tin. Allow to cool in the tin for a few minutes before turning out and leaving to cool completely on a wire rack.

For the topping; measure all the ingredients, except the walnuts, into a bowl, or into a food processor, and mix well until smooth. Spread over the top of the cake, swirling the top with a spatula for a decorative effect. Decorate the top with the walnut halves. Chill a little before serving.
